Vineyards:
Vineyards located all over the Western Cape, but mostly from the coastal area. Vines are grown in different conditions, with some being trellised and some being bush vine, some being iriigated and some not. We believe that every unique vineyard has its own needs, and will be taken care of accordingly. Grapes are picked early in the morning at optimal ripeness.
Winemaking:
Grapes are hand sorted before being crushed. Fermentation takes place in stainless steel tanks, where the grapes are punched down and pumped over every 4 hours. This has an extraction effect whereby colour and flavour are obtained. After fermentation, wine is taken to barrel to undergo malolactic fermentation, which makes for a softer, less harsh wine. After malolactic fermentation, the wine is racked of the lease, the barrels are cleaned, anf the wine is racked back into barrel for ageing. Dark fruit and spice fills the glass. Plum, cherry and cassis are most prominent. Coriander, cloves and cinnamon combine beautifully with the toast of the wood, to present a well-balanced and truly elegant wine. Soft and integrated tannins make for smooth drinking.
Tasting notes:
Goes well with roast lamb, steaks, stews and venison. Lovely to have with cheeses, preserves and bread.
